- ¼ tsp salt
- ¼ cup (56g) unsalted butter, melted
- ½ cup (100g) light brown sugar
- 1 tbsp ground cinnamon
- 1 cup (120g) powdered sugar
- 2 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, cream the softened butter and sugar together using a hand or stand mixer. Beat until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract. Beat until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing; the dough should be soft but not sticky.
- Chill the dough in the refrigerator for 20-30 minutes. This will make it easier to roll out.
- While the dough chills, prepare the cinnamon sugar filling. Mix the melted butter, brown sugar, and cinnamon in a small bowl until it forms a paste-like consistency.
- Once chilled, roll the dough into a rectangle roughly ¼ inch thick on a lightly floured surface.
- Spread the cinnamon sugar filling evenly over the dough, leaving a small border around the edges.
- Carefully roll the dough into a tight log. Wrap the log in plastic wrap and refrigerate for another 15 minutes to firm up.
- Slice the log into ¼ inch thick cookies and arrange them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are just lightly golden. Remove from the oven and let them cool completely on the baking sheets.
- Prepare the glaze by whisking powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
