- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 325°F (165°C) and line your muffin tin with paper liners.
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until evenly mixed. The mixture should resemble wet sand.
- Divide the crumb mixture evenly among the muffin cups, pressing it firmly into the bottom with the back of a spoon or a small glass. Bake for 5 minutes, then set aside to cool.
- Blend the sliced strawberries, sugar, and lemon juice in a food processor until smooth. Strain through a fine mesh sieve if you prefer a seed-free puree. Set aside.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract, sour cream, and heavy cream until fully combined.
- Spoon the cheesecake batter over the cooled crusts, filling each liner about 3/4 full.
- Place a small dollop of the strawberry puree on top of each cheesecake and use a toothpick to create beautiful swirls.
- Bake in the preheated oven for 18-20 minutes, or until the edges are set and the centers are slightly jiggly. Do not overbake!
- Allow the cheesecakes to cool completely in the pan, then transfer to the refrigerator for at least 2 hours to set.
- Carefully remove the paper liners and serve chilled. Enjoy!
