  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 325°F (165°C) and line your muffin tin with paper liners.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until evenly mixed. The mixture should resemble wet sand.
  3. Divide the crumb mixture evenly among the muffin cups, pressing it firmly into the bottom with the back of a spoon or a small glass. Bake for 5 minutes, then set aside to cool.
  4. Blend the sliced strawberries, sugar, and lemon juice in a food processor until smooth. Strain through a fine mesh sieve if you prefer a seed-free puree. Set aside.
  5. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract, sour cream, and heavy cream until fully combined.
  6. Spoon the cheesecake batter over the cooled crusts, filling each liner about 3/4 full.
  7. Place a small dollop of the strawberry puree on top of each cheesecake and use a toothpick to create beautiful swirls.
  8. Bake in the preheated oven for 18-20 minutes, or until the edges are set and the centers are slightly jiggly. Do not overbake!
  9. Allow the cheesecakes to cool completely in the pan, then transfer to the refrigerator for at least 2 hours to set.
  10. Carefully remove the paper liners and serve chilled. Enjoy!
