- 2–3 fresh jalapeños, diced (remove seeds for less heat)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/4 cup green onions, chopped (plus extra for garnish)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) if you plan to bake the dip.
- Dice the jalapeños, removing the seeds if you prefer less heat.
- Chop the green onions and set aside a portion for garnish.
- Grate the cheddar cheese.
- In a medium mixing bowl, stir together the softened cream cheese, sour cream, and mayonnaise until smooth.
- Add the diced jalapeños, corn, garlic powder, smoked paprika, and half of the cheddar cheese. Season with salt and pepper to taste. Mix until fully combined.
- Spread the mixture evenly into your baking dish or skillet.
- Sprinkle the remaining cheddar cheese on top and garnish with more green onions.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden brown. Broil for an extra 2-3 minutes for a crispy top, if desired.
- Let the dip cool for a few minutes before serving with tortilla chips, crackers, or veggies.
Notes
Adjust the spice level by adding more or fewer jalapeños. Use freshly grated cheese for better melting and flavor. You can prepare the dip mixture ahead of time and store it in the fridge until ready to bake.
