Instructions
- Prepare the Lime Rice: In a medium saucepan, combine 1 cup jasmine rice with 2 cups water or chicken broth. Add 1 tablespoon olive oil and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the liquid is absorbed. Remove from heat, fluff with a fork, and mix in the lime juice and zest. Set aside.
- Marinate the Chicken: In a mixing bowl, whisk together soy sauce, honey, chili powder, smoked paprika, garlic powder, cayenne pepper, and lime juice. Add the chicken pieces and toss to coat. Let marinate for at least 20 minutes or overnight in the refrigerator for deeper flavor.
- Cook the Chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
- Make the Mango Sauce: In the same skillet, add the diced mango and cook for 2-3 minutes until softened. Stir in the remaining marinade and bring to a simmer. Add 1 teaspoon cornstarch and stir continuously until the sauce thickens.
- Combine and Serve: Divide the lime rice into bowls, top with the cooked chicken, and drizzle the mango sauce generously over everything. Add your favorite toppings like fresh cilantro, avocado slices, or extra lime wedges for a burst of flavor.
Notes
Marinate the chicken for at least 20 minutes for better flavor. Adjust the spice level to your preference by modifying the amount of cayenne pepper. Use fresh mango for the best texture and flavor, but frozen mango can be used if thawed beforehand.
