Description
These stuffed mushrooms combine the rich sweetness of caramelized onions with the creamy nuttiness of Gruyère cheese, making them the perfect appetizer for any occasion.

- Medium-sized button or cremini mushrooms
- 1 tablespoon olive oil
- 1 yellow onion, thinly sliced
- 1 tablespoon butter
- 1 cup Gruyère cheese, grated
- 1 teaspoon fresh thyme (or dried thyme)
- 1 clove garlic, minced
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
- Optional garnish: Fresh parsley or chives
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Gently wipe the mushroom caps clean with a damp paper towel. Remove the stems and set them aside. Place the mushroom caps on the prepared baking sheet with the hollow side facing up.
- Heat a small skillet over medium heat and add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the thinly sliced onions and cook for 15-20 minutes, stirring occasionally, until golden brown and caramelized. Add the minced garlic and cook for another minute, until fragrant.
- Finely chop the reserved mushroom stems and add them to a mixing bowl. Stir in the caramelized onions, grated Gruyère cheese, fresh thyme, 1/2 cup of panko breadcrumbs, and a pinch of salt and pepper. Mix until well combined.
- Use a teaspoon or small scoop to fill each mushroom cap generously with the prepared filling. Press down lightly to ensure the filling doesn’t fall out.
- Sprinkle a pinch of panko breadcrumbs on top of each stuffed mushroom for added crunch.
- Drizzle the mushrooms with a little olive oil and bake in the preheated oven for 20-25 minutes, or until the tops are golden and the cheese is bubbly.
- Remove the mushrooms from the oven and let them cool for 5 minutes before serving. Garnish with fresh parsley or chives.
