  • 4 thick slices of artisan bread (sourdough or ciabatta)
  • 4 ounces burrata cheese
  • Fresh basil leaves

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Wash 2 cups of cherry tomatoes and pat them dry. Place them on the prepared baking sheet and drizzle with 2 tablespoons of olive oil. Sprinkle with a pinch of salt and pepper, then toss to coat evenly. Spread them out in a single layer.
  3. Roast the tomatoes in the preheated oven for 20-25 minutes, or until the tomatoes are soft and slightly blistered.
  4. Slice 4 pieces of artisan bread about 1-inch thick. Toast the slices in a toaster or the oven until golden and crisp. If using the oven, place them on a separate baking sheet during the last 5-7 minutes of roasting the tomatoes.
  5. Prepare the balsamic drizzle: Pour ½ cup of balsamic vinegar into a small saucepan and simmer over low heat for 8-10 minutes until it thickens into a syrup. Let it cool slightly.
  6. Spread each toasted bread slice with a generous portion of burrata cheese. Top with the roasted tomatoes, letting some of the juices soak into the bread.
  7. Drizzle the balsamic glaze over the top and scatter fresh basil leaves for flavor and color.
  8. Arrange the burrata toast on a platter and serve immediately while warm.
