  • 1 pound lean ground beef
  • 2 cups (400 g) long-grain rice
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 large onion, sliced or diced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 3 cups (720 ml) beef broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 bay leaf
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the chopped onions and sauté for 3-4 minutes until softened.
  2. Stir in the minced garlic and grated ginger. Cook for another minute, stirring frequently to prevent burning.
  3. Add the ground beef to the pot. Break it up with a wooden spoon and cook until browned, about 5-7 minutes. Season with a pinch of salt and pepper.
  4. Mix in 2 tablespoons of tomato paste and cook for 2 minutes to caramelize and deepen the flavor.
  5. Add the crushed tomatoes, sliced bell peppers, thyme, curry powder, and a bay leaf. Stir everything together and simmer for 5 minutes.
  6. Pour in 3 cups (720 ml) of beef broth and bring to a gentle boil.
  7. Rinse 2 cups (400 g) of long-grain rice under cold water until the water runs clear. Add the rinsed rice to the pot and stir to combine.
  8. Reduce the heat to low, cover the pot, and let the rice cook for 20-25 minutes. Stir occasionally to prevent sticking.
  9. If using, add a whole Scotch bonnet pepper during the last 10 minutes of cooking for extra heat.
  10. Once the rice is tender and has absorbed the liquid, remove the pot from heat. Let it sit, covered, for 5 minutes before fluffing with a fork.
  11. Serve hot and enjoy the flavors of this quick and easy Jollof rice with ground beef!
