- 1 pound lean ground beef
- 2 cups (400 g) long-grain rice
- 2 tablespoons tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 large onion, sliced or diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 3 cups (720 ml) beef broth
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 teaspoon curry powder
- 1 bay leaf
- 1 Scotch bonnet pepper (optional)
Instructions
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the chopped onions and sauté for 3-4 minutes until softened.
- Stir in the minced garlic and grated ginger. Cook for another minute, stirring frequently to prevent burning.
- Add the ground beef to the pot. Break it up with a wooden spoon and cook until browned, about 5-7 minutes. Season with a pinch of salt and pepper.
- Mix in 2 tablespoons of tomato paste and cook for 2 minutes to caramelize and deepen the flavor.
- Add the crushed tomatoes, sliced bell peppers, thyme, curry powder, and a bay leaf. Stir everything together and simmer for 5 minutes.
- Pour in 3 cups (720 ml) of beef broth and bring to a gentle boil.
- Rinse 2 cups (400 g) of long-grain rice under cold water until the water runs clear. Add the rinsed rice to the pot and stir to combine.
- Reduce the heat to low, cover the pot, and let the rice cook for 20-25 minutes. Stir occasionally to prevent sticking.
- If using, add a whole Scotch bonnet pepper during the last 10 minutes of cooking for extra heat.
- Once the rice is tender and has absorbed the liquid, remove the pot from heat. Let it sit, covered, for 5 minutes before fluffing with a fork.
