- 1 lb ground turkey (93% lean)
- 2 medium sweet potatoes, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced (any color)
- 2 cups fresh spinach, roughly chopped
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional, cheddar or mozzarella)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Peel and dice the sweet potatoes into small cubes. Toss them with olive oil, salt, and pepper, then spread them evenly on the baking sheet. Roast for 25-30 minutes until tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, heat a large skillet over medium heat. Add a drizzle of olive oil, then sauté the diced onion and garlic until fragrant, about 2-3 minutes.
- Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.
- Stir in the diced bell peppers, spinach, cumin, paprika, salt, and pepper. Cook for another 3-4 minutes until the veggies are softened and the flavors meld together.
- Once the sweet potatoes are finished roasting, reduce the oven temperature to 375°F (190°C).
- In a 9×13-inch baking dish, layer the roasted sweet potatoes evenly on the bottom. Top with the ground turkey mixture, spreading it out evenly.
- If using cheese, sprinkle it generously over the top. Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 minutes to allow the cheese to melt and bubble.
- Garnish with fresh parsley before serving, if desired.
