Description

Ingredients

  • 2 fresh cucumbers, thinly sliced or chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls (bocconcini or pearls), or larger mozzarella cut into chunks
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn or chopped
  • 3 tablespoons olive oil (extra virgin)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Wash the cucumbers and cherry tomatoes thoroughly. Slice the cucumbers into thin rounds or bite-sized chunks. Halve the cherry tomatoes, and thinly slice the red onion.
  2. If using larger mozzarella balls, cut them into bite-sized pieces. If using pearls, they are ready to use.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, and a pinch of salt and black pepper. Taste and adjust seasoning as needed.
  4. In a large mixing bowl, combine the cucumbers, cherry tomatoes, mozzarella, and red onion. Pour the dressing over the salad and toss gently to coat all the ingredients.
  5. Tear or chop the fresh basil leaves and sprinkle them over the salad. Toss gently to distribute the herbs evenly.
  6. Transfer the salad to a serving dish and enjoy immediately, or chill in the refrigerator for 15 minutes to let the flavors meld together.
