Ingredients
- Cheese tortellini (fresh or frozen)
- Baby spinach (fresh or thawed and drained if frozen)
- Mushrooms (button, cremini, or baby bella, sliced thinly)
- Garlic cloves, minced
- Olive oil (2 tablespoons)
- Butter
- Heavy cream
- Parmesan cheese, freshly grated
- Salt
- Pepper
- Nutmeg (a pinch)
Instructions
- Cook the tortellini according to the package instructions in a large pot of salted boiling water for 5-7 minutes. Drain and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add sliced mushrooms and a pinch of salt, then sauté for 5-7 minutes until tender and slightly golden.
- Add minced garlic to the skillet and cook for about 1 minute, stirring constantly until fragrant.
- Lower the heat and add butter to the skillet. Once melted, pour in the heavy cream. Stir gently to combine and let it simmer for 3-5 minutes.
- Sprinkle freshly grated Parmesan cheese into the sauce and stir until melted and smooth. Add a pinch of nutmeg and season with salt and pepper to taste.
- Increase the heat to medium and stir baby spinach into the sauce. Cook for 2-3 minutes until the spinach wilts.
- Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce. Warm for 2 minutes, stirring occasionally.
- Serve immediately with additional Parmesan on top, if desired.
