Description

A quick and easy recipe for smoky BBQ chicken flatbread pizza with gooey melted cheese, tender chicken, and crisp veggies. Perfect for weeknight dinners or gatherings.


Ingredients

  • 2 flatbreads (thin, crispy variety or naan bread)
  • 1 cup grilled or rotisserie chicken, shredded or diced
  • 1/3 cup smoky barbecue sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup red or yellow bell pepper, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). If using a pizza stone, place it in the oven to heat.
  2. Shred or dice the cooked chicken into bite-sized pieces. Toss them in about 2 tablespoons of barbecue sauce until evenly coated.
  3. Thinly slice the red onion and bell pepper. Set aside.
  4. Place the flatbreads on a baking sheet or preheated pizza stone. Drizzle a small amount of olive oil over the surface of each flatbread.
  5. Using a spatula, evenly spread a layer of barbecue sauce over each flatbread, leaving a small border around the edges.
  6. Distribute the barbecue-coated chicken evenly over the flatbreads.
  7. Scatter the sliced red onion and bell pepper on top of the chicken.
  8. Generously sprinkle shredded mozzarella over the toppings.
  9. Place the flatbreads in the oven and bake for 8-10 minutes, or until the cheese is melted and bubbling, and the edges of the flatbread are golden and crisp.
  10. Remove the pizzas from the oven and let them cool for a couple of minutes. Sprinkle freshly chopped cilantro on top.
  11. Slice the flatbread pizzas into wedges and serve immediately.
