A quick and easy recipe for smoky BBQ chicken flatbread pizza with gooey melted cheese, tender chicken, and crisp veggies. Perfect for weeknight dinners or gatherings.

- 2 flatbreads (thin, crispy variety or naan bread)
- 1 cup grilled or rotisserie chicken, shredded or diced
- 1/3 cup smoky barbecue sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup red or yellow bell pepper, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Crushed red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C). If using a pizza stone, place it in the oven to heat.
- Shred or dice the cooked chicken into bite-sized pieces. Toss them in about 2 tablespoons of barbecue sauce until evenly coated.
- Thinly slice the red onion and bell pepper. Set aside.
- Place the flatbreads on a baking sheet or preheated pizza stone. Drizzle a small amount of olive oil over the surface of each flatbread.
- Using a spatula, evenly spread a layer of barbecue sauce over each flatbread, leaving a small border around the edges.
- Distribute the barbecue-coated chicken evenly over the flatbreads.
- Scatter the sliced red onion and bell pepper on top of the chicken.
- Generously sprinkle shredded mozzarella over the toppings.
- Place the flatbreads in the oven and bake for 8-10 minutes, or until the cheese is melted and bubbling, and the edges of the flatbread are golden and crisp.
- Remove the pizzas from the oven and let them cool for a couple of minutes. Sprinkle freshly chopped cilantro on top.
- Slice the flatbread pizzas into wedges and serve immediately.
