Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel and cut the beets into wedges and the sweet potatoes into chunks, keeping sizes similar for even cooking.
- In a large mixing bowl, toss the beets and sweet potatoes with olive oil, salt, pepper, and minced garlic (if using). Ensure they are evenly coated.
- Arrange the vegetables in a single layer on the prepared baking sheet, avoiding overcrowding.
- Roast for 30-35 minutes, tossing halfway through, until the vegetables are tender and caramelized around the edges.
- Remove the vegetables from the oven and let them cool slightly. Sprinkle crumbled feta over the top.
- Garnish with chopped parsley or dill and serve warm.
