- 1 cup cooked white or brown rice
- 1 cup black beans, canned, rinsed, and drained
- 2 medium diced tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced

- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar or Mexican blend cheese (optional)
- 1 avocado, sliced or diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, for squeezing
- Tortilla chips (optional)
- 1 tablespoon olive oil
Instructions
- Cook the rice: Prepare 1 cup of rice according to package instructions. Set aside once cooked.
- Season the beef: In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Sauté the beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.
- Add seasoning: Sprinkle the seasoning mix evenly over the beef. Stir well to coat, then cook for another 2 minutes.
- Prepare the toppings: Dice tomatoes, chop cilantro, and slice avocado. Set aside.
- Assemble the bowls: Start with a layer of rice in each bowl. Add a scoop of seasoned ground beef, followed by black beans, diced tomatoes, avocado, and shredded cheese.
- Finish with toppings: Garnish with cilantro and a squeeze of lime. Add tortilla chips for crunch if desired.
