- 2 medium-sized fresh zucchini, sliced into thin rounds (about 1/8 inch)
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 large eggs, lightly beaten
- Olive oil spray
- Ranch dip (store-bought or homemade)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on top for extra crispiness.
- Wash and dry the zucchini, then slice them into thin rounds (about 1/8 inch thick). Keep the slices uniform for even cooking.
- In one bowl, whisk the eggs. In another bowl, combine the grated Parmesan, breadcrumbs, garlic powder, and paprika. Mix until well combined.
- Dip each zucchini slice into the egg wash, letting any excess drip off, then press it into the Parmesan mixture, ensuring both sides are coated evenly.
- Lay the coated zucchini chips in a single layer on the prepared baking sheet or wire rack. Make sure they don’t overlap to ensure they get crispy.
- Lightly spray the tops of the chips with olive oil. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- While the chips bake, mix your ranch dip. If making homemade, combine Greek yogurt with ranch seasoning and a splash of lemon juice for extra zing.
- Remove the zucchini chips from the oven and let them cool for a few minutes. Serve them on a platter with the ranch dip on the side.
