  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional)
  • 1 teaspoon dried thyme or a few sprigs fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, chives, or a drizzle of olive oil for garnish

Instructions

  1. Scrub sunchokes clean under running water and chop into small chunks. No need to peel unless preferred.
  2. Heat olive oil and butter in a large soup pot over medium heat. Add chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.
  3. Add chopped sunchokes to the pot and stir to coat them with the onion and garlic mixture. Cook for 2-3 minutes to release their flavor.
  4. Pour in vegetable broth and add thyme. Bring the mixture to a gentle boil, then reduce heat and simmer for 25-30 minutes, or until sunchokes are tender.
  5. Remove pot from heat and let cool slightly. Using an immersion blender, puree the soup until smooth. If using a regular blender, blend in batches to avoid spills.
  6. Return pureed soup to the pot and stir in heavy cream. Heat gently over low heat until warmed through. Season with salt, pepper, and lemon juice to taste.
  7. Ladle soup into bowls and garnish with fresh parsley, chives, or a drizzle of olive oil.
