  • 2 cups fresh spinach
  • 1 cup artichoke hearts, canned or jarred, drained and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Mince 3 cloves of garlic, roughly chop 1 cup of artichoke hearts, rinse 2 cups of fresh spinach, and grate about ½ cup of Parmesan cheese.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
  3. Pour in 1 cup of chicken broth and bring it to a gentle simmer to create the base for the creamy sauce.
  4. Add 1 pound (450 grams) of potato gnocchi to the skillet. Stir to coat the gnocchi in the broth and let it cook for about 5 minutes, stirring occasionally, until the gnocchi begins to soften.
  5. Reduce the heat to medium-low and pour in 1 cup of heavy cream. Stir well to combine, ensuring the gnocchi is fully coated in the creamy sauce.
  6. Fold the chopped artichoke hearts into the skillet and cook for another 3-4 minutes until heated through.
  7. Add the fresh spinach, stirring gently until it wilts completely, about 2-3 minutes.
  8. Sprinkle the grated Parmesan cheese over the top and stir to combine. Let the mixture cook for another 2-3 minutes until the cheese melts into the sauce.
  9. Season with salt and pepper to taste. Add a pinch of crushed red pepper flakes if desired. Stir one last time to ensure everything is well combined.
  10. Remove the skillet from heat and let it sit for a minute or two to thicken slightly. Serve warm and enjoy!
