Instructions

  1. Prepare the Dates: If your Medjool dates are dry, soak them in warm water for 10-15 minutes to soften them. Once they’re soft, drain and remove the pits.
  2. Blend the Ingredients: Add the pitted dates to your high-speed blender or food processor. Pour in 1 cup (240 ml) of unsweetened almond milk, 1 teaspoon of vanilla extract, and a pinch of sea salt.
  3. Blend Until Smooth: Start blending on low speed and gradually increase to high. Blend for about 2-3 minutes until the mixture is silky smooth. Scrape down the sides with a spatula if needed.
  4. Adjust Consistency: If the sauce seems too thick, add more almond milk, 1 tablespoon at a time, until it reaches your desired consistency.
  5. Taste and Adjust: Give the sauce a taste and add more vanilla or a tiny bit more salt if needed. If you like a sweeter sauce, you can toss in an extra date.
  6. (Optional) Heat the Sauce: For a warm caramel sauce, transfer the blended mixture to a small saucepan and heat over low heat for 2-3 minutes. Stir continuously to prevent sticking.
  7. Cool and Store: Once the sauce is ready, let it cool slightly before serving or transfer it to an airtight jar for storage.
