- 2 boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 12 ounces fettuccine pasta
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Rub Cajun seasoning onto the chicken strips, coating them evenly. Let sit for 5 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- Cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Melt butter in the same skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in heavy cream and stir continuously. Bring to a gentle simmer, then reduce heat to low.
- Gradually add grated Parmesan cheese, stirring until fully melted and sauce is smooth and creamy.
- Season sauce with salt and pepper to taste. Add reserved pasta water a little at a time to adjust consistency.
- Add cooked pasta to the skillet and toss to coat evenly in the sauce. Return cooked chicken to the skillet and toss gently to combine.
- Sprinkle fresh parsley over the pasta and serve immediately.
