Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 12 ounces fettuccine pasta
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Rub Cajun seasoning onto the chicken strips, coating them evenly. Let sit for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  4. Melt butter in the same skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in heavy cream and stir continuously. Bring to a gentle simmer, then reduce heat to low.
  6. Gradually add grated Parmesan cheese, stirring until fully melted and sauce is smooth and creamy.
  7. Season sauce with salt and pepper to taste. Add reserved pasta water a little at a time to adjust consistency.
  8. Add cooked pasta to the skillet and toss to coat evenly in the sauce. Return cooked chicken to the skillet and toss gently to combine.
  9. Sprinkle fresh parsley over the pasta and serve immediately.
