Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups chicken or vegetable broth
  • 4 cups fresh kale, chopped
  • 1/2 cup (50g) grated parmesan cheese
  • 12 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, carrots, and celery. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are softened and fragrant.
  3. Sprinkle in 1 teaspoon of dried thyme and add 1 bay leaf. Stir to coat the vegetables and release the herb’s aroma.
  4. Add 2 cans (15 ounces each) of drained and rinsed white beans to the pot. Stir everything together.
  5. Pour in 4 cups (1 liter) of chicken or vegetable broth and bring to a gentle boil. Reduce the heat to low and let the soup simmer for 15 minutes.
  6. Remove the bay leaf and use an immersion blender to puree half of the soup directly in the pot. This creates a creamy texture while leaving some beans and veggies intact for added heartiness. If using a regular blender, carefully transfer half the soup to blend, then return it to the pot.
  7. Add 4 cups of chopped kale to the soup. Stir well to combine and cook for an additional 5-7 minutes until the kale is wilted and tender.
  8. Stir in ½ cup (50g) of grated parmesan cheese and 1-2 tablespoons of fresh lemon juice. Taste and adjust the seasoning with salt and pepper as needed.
  9. Serve the soup hot, garnished with extra parmesan and freshly cracked black pepper if desired.
