  • 6 cups chicken broth (or vegetable broth)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon toasted sesame oil
  • 2 cups sliced mushrooms
  • 1 cup thinly sliced carrots
  • 3 cups chopped baby bok choy
  • 2 green onions, sliced (white and green parts separated)
  • Optional toppings: fresh cilantro, sesame seeds, red pepper flakes, lime

Instructions

  1. In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of grated ginger. Sauté for 1-2 minutes until fragrant.
  2. Pour in 6 cups of chicken broth (or vegetable broth). Stir in 2 tablespoons of soy sauce and bring the mixture to a gentle boil.
  3. Add 2 cups of sliced mushrooms, 1 cup of thinly sliced carrots, and the white parts of 2 green onions. Simmer for 5 minutes until the veggies begin to soften.
  4. Carefully drop in 12-15 frozen potstickers. Let them cook in the broth for about 8-10 minutes or until they’re tender and heated through.
  5. Add 3 cups of chopped baby bok choy and cook for another 2 minutes. Stir in the green parts of the green onions. Taste the broth and adjust seasoning if needed.
  6. Ladle the soup into bowls and top with optional garnishes like fresh cilantro, sesame seeds, or a squeeze of lime.
