Ingredients
- 2 boneless, skinless chicken breasts
- 6 cups low-sodium chicken broth
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Fresh parsley, chopped for garnish
Instructions
- Dice the onion, slice the carrots and celery, mince the garlic, and rinse the rice.
- Place the chicken breasts in the bottom of the crockpot. Add the carrots, celery, onion, and garlic on top.
- Pour in the chicken broth, ensuring the chicken is fully submerged.
- Add the rice, bay leaves, thyme, salt, and pepper. Stir gently to combine.
- Cover the crockpot with the lid and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and the rice is fully cooked.
- Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot and stir well.
- Remove bay leaves before serving.
- Serve hot, garnished with fresh parsley if desired.
