  • 2 lbs chicken breast, boneless and skinless, cut into bite-sized chunks
  • 1 cucumber, grated and squeezed to remove excess water
  • 1 cup Greek yogurt, full-fat preferred
  • 2 cloves garlic, freshly minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons olive oil, extra virgin
  • 2 teaspoons dill, fresh or dried
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish with olive oil.
  2. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, oregano, and 1 tablespoon of olive oil.
  3. In a mixing bowl, combine grated and drained cucumber, Greek yogurt, minced garlic, lemon juice, dill, and a pinch of salt. Mix until smooth and creamy.
  4. In a large bowl, toss the seasoned chicken pieces with sliced onion and cherry tomatoes. Add half of the tzatziki sauce and mix until evenly coated.
  5. Pour the chicken and veggie mixture into the prepared casserole dish. Spread evenly, then dollop the remaining tzatziki sauce on top. Sprinkle with crumbled feta cheese.
  6. Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is fully cooked and the top is golden and bubbly.
  7. Let the casserole cool for 5 minutes before serving. Garnish with fresh dill or extra feta if desired.
